04 - 1 zucchini, diced
05 - 1 cup frozen peas
06 - 2 spring onions, sliced

07 - 2 tbsp olive oil
08 - 2 cloves garlic, minced
09 - 1 tsp ground cumin
10 - 1 tsp smoked paprika

12 - ½ tsp ground turmeric

→ Toppings

15 - Fresh cilantro, chopped
16 - Lime wedges

# Directions:

01 - Cook the rice according to package directions and keep warm until ready to serve.
02 - While the rice cooks, heat olive oil in a large skillet over medium heat. Add the ground turkey and cook, breaking it apart with a wooden spoon, until mostly browned, about 5 minutes.
03 - Add the minced garlic, cumin, smoked paprika, coriander, turmeric, cayenne, salt, and pepper to the turkey. Sauté for 2 minutes until fragrant and the spices are well distributed.
04 - Stir in the diced bell pepper and zucchini. Cook for 5 to 6 minutes until the vegetables have softened but still retain some texture.
05 - Fold in the frozen peas and cook for another 2 minutes until heated through. Taste and adjust seasoning as needed.
06 - Divide the warm rice among bowls and spoon the spiced turkey and vegetable mixture over the top. Garnish with sliced spring onions, chopped cilantro, and lime wedges.

# Expert Tips:

01 -
  • It transforms basic ground turkey into something genuinely exciting with just a handful of pantry spices.
  • Everything cooks in one skillet, which means cleanup is almost nonexistent.
  • The leftovers reheat beautifully, so you will actually look forward to lunch the next day.
02 -
  • Do not rush the spice blooming step, those two minutes of toasting are where all the depth and complexity gets built.
  • Frozen peas go in at the very end because adding them too early turns them into dull mush.
03 -
  • Pat the ground turkey dry before browning so it sears instead of steaming in its own liquid.
  • Toast the spices in the oil with the meat for a minute before adding vegetables to unlock their full flavor potential.
