- Preheat the oven to 425°F.
- Toss fries with olive oil, paprika, garlic powder, salt, and black pepper. Spread on a baking sheet in a single layer and bake for 25–30 minutes, flipping halfway, until golden and crispy.
- Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned for about 5–6 minutes. Drain excess fat if needed.
- Add chopped onion and garlic to the beef; sauté for 2–3 minutes until softened.
- Stir in taco seasoning and water. Simmer 2–3 minutes until thickened. Season to taste with salt and pepper.
- When fries are done, transfer them to an ovenproof platter or skillet.
- Evenly sprinkle shredded cheeses over the fries and spoon the beef mixture on top. Drizzle with nacho cheese sauce if using.
- Return to the oven for 5 minutes, or until cheese is melted and bubbly.
- Remove from oven and top with tomatoes, black olives, jalapeños, avocado, green onions, cilantro, and dollops of sour cream.
- Serve immediately while hot.
