Colorful layered dessert with creamy jello filling, fresh fruit, and playful bunny decorations in individual jars

# What You'll Need:

→ Jello Pie Layer

01 - 1 (3 oz) box strawberry-flavored gelatin
02 - 1 (3 oz) box lemon-flavored gelatin
03 - 2 cups boiling water, divided
04 - 2 cups cold water, divided
05 - 1 cup heavy whipping cream
06 - 1/2 cup cream cheese, softened
07 - 1/4 cup granulated sugar
08 - 1 teaspoon vanilla extract

→ Fruit & Parfait Layers

09 - 1 cup fresh strawberries, diced
10 - 1 cup fresh pineapple, diced
11 - 1 cup mini marshmallows

→ Topping & Decoration

12 - 1 cup whipped cream or whipped topping
13 - 6 marshmallow bunny candies
14 - 2 tablespoons pastel sprinkles

# Directions:

01 - Dissolve strawberry gelatin in 1 cup boiling water, stirring until completely dissolved. Add 1 cup cold water and mix well. Pour into a shallow dish and refrigerate for 1 hour until set. Repeat the process with lemon gelatin in a separate dish.
02 - Using an electric mixer, beat heavy whipping cream in a chilled bowl until soft peaks form. Set aside in refrigerator until needed.
03 - In a separate bowl, beat softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Gently fold the whipped cream into the cream cheese mixture until fully incorporated and no streaks remain.
04 - Once both gelatin layers are completely set, cut them into 1/2-inch cubes using a sharp knife. Keep the flavors separated on different plates.
05 - Spoon a portion of cream cheese mixture into the bottom of each jar. Add strawberry gelatin cubes, diced strawberries, and mini marshmallows. Add another layer of cream mixture, then lemon gelatin cubes with diced pineapple and more marshmallows. Finish with a final layer of cream cheese mixture on top.
06 - Refrigerate assembled jars for at least 1 hour to allow flavors to meld and layers to set properly.
07 - Just before serving, top each parfait jar with whipped cream, place a marshmallow bunny candy on top, and sprinkle with pastel sprinkles for decoration.

# Expert Tips:

01 -
  • Individual jars mean everyone gets their own cute portion and no fighting over the last slice
  • The creamy cheesecake layer balances the sweet jello perfectly and feels so much more special than plain gelatin
  • You can assemble these the night before and they actually taste better after chilling overnight
02 -
  • Clear glass jars show off all the colorful layers, so pick ones with straight sides for the prettiest presentation
  • The gelatin needs to be completely set before cubing or the layers will blur together and lose their definition
03 -
  • Run your spoon under hot water between layers to get clean, distinct stripes in the parfait
  • Let the cream cheese mixture sit at room temperature for 10 minutes before assembling if it's too cold to spread smoothly
