Chocolate Mousse Mixed Berries (Printable)

Smooth chocolate mousse paired with fresh mixed berries creates an elegant and luscious dessert experience.

# What You'll Need:

→ Chocolate Mousse

01 - 5.3 oz dark chocolate (minimum 60% cocoa), chopped
02 - 3 large eggs, separated
03 - 1.4 oz granulated sugar
04 - 0.85 cup heavy cream, chilled
05 - 1 tsp pure vanilla extract

→ Mixed Berries Topping

06 - 3.5 oz strawberries, hulled and quartered
07 - 2.6 oz raspberries
08 - 2.6 oz blueberries
09 - 1 tbsp powdered sugar (optional)

→ Garnish

10 - Fresh mint leaves (optional)
11 - Extra chocolate shavings (optional)

# Directions:

01 - Place chopped dark chocolate in a heatproof bowl set over a pot of simmering water. Stir continuously until completely smooth and melted. Remove from heat source and allow to cool for 5 minutes.
02 - In a thoroughly clean mixing bowl, beat egg whites until soft peaks form. Gradually sprinkle in granulated sugar while continuing to beat until stiff, glossy peaks develop.
03 - Lightly whisk egg yolks with vanilla extract in a separate bowl. Pour melted chocolate into yolk mixture, stirring constantly until fully incorporated and smooth.
04 - In a chilled bowl, whip heavy cream until soft peaks form. Be careful not to over-whip.
05 - Gently fold whipped cream into chocolate-yolk mixture using a spatula. Carefully incorporate beaten egg whites in two separate additions, maintaining airy texture throughout.
06 - Divide mousse evenly among individual serving glasses or ramekins. Cover with plastic wrap and refrigerate for minimum 2 hours or until completely set.
07 - Combine strawberries, raspberries, and blueberries in mixing bowl. Lightly toss with powdered sugar if additional sweetness is desired.
08 - Remove chilled mousse from refrigerator. Top each portion generously with mixed berry mixture. Garnish with fresh mint leaves and chocolate shavings if using. Serve immediately while cold.

# Expert Tips:

01 -
  • The contrast between the silky, bittersweet chocolate and the burst of fresh berries creates that perfect bite
  • Despite tasting like something from a fancy patisserie, it comes together with just a few basic techniques
  • You can make it ahead of time and pull it out when guests arrive, looking like you spent hours
02 -
  • The chocolate must be completely cooled before adding it to the egg yolks, otherwise youll end up with scrambled eggs in your chocolate
  • Folding is not stirring, use a gentle motion that incorporates air rather than beating it out of the mixture
  • The mousse needs at least two hours to set, but I find it develops even better flavor if left overnight
03 -
  • If your egg whites wont whip up, make sure your bowl is completely grease free and that no yolk slipped in during separation
  • The mousse can be made up to two days ahead and actually improves with a little time in the refrigerator
