# What You'll Need:

01 - 2 medium carrots, peeled and grated
02 - 2 medium apples, cored and julienned (preferably sweet-tart variety)
03 - 1/4 small red onion, finely sliced
04 - 1/4 cup fresh parsley, chopped

→ Dressing

05 - 1/3 cup plain Greek yogurt
06 - 1 tablespoon mayonnaise
07 - 1 tablespoon honey
08 - 2 teaspoons apple cider vinegar
09 - 1 teaspoon Dijon mustard
10 - Salt and black pepper, to taste

→ Optional Add-ins

11 - 1/4 cup toasted walnuts or pecans, chopped
12 - 1/4 cup raisins or dried cranberries

01 - In a large bowl, combine the grated carrots, julienned apples, sliced red onion, and chopped parsley.
02 - In a separate small bowl, whisk together the Greek yogurt, mayonnaise, honey, apple cider vinegar, Dijon mustard, salt, and pepper until creamy and smooth.
03 - Pour the dressing over the apple-carrot mixture. Toss gently to combine and coat all ingredients evenly.
